Chef Rick Bayless, best known for the PBS series Mexico: One Plate at a Time, is opening two restaurants at Caesars Entertainment properties.

The operator Thursday announced that Harrah’s Joliet in Illinois and Caesars Palace Las Vegas will host Bayless’ Tortazo restaurants.

“We’re so pleased to partner with Chef Rick to bring Tortazo to Joliet and Las Vegas,” said Caesars Entertainment President and COO Anthony Carano in a statement. “Chef Rick is a powerhouse – bringing a new, eclectic offering to our brand – and is the perfect addition to our roster of culinary superstars that our guests can experience and enjoy across the empire.”

Tortazo, a fast-casual Mexican restaurant, features the Torta, a Mexican sandwich, and other dishes including tacos, quesadillas and house-made churros.

“I’m thrilled to partner with Caesars to open Tortazo at two of their incredible destinations, and I’m especially excited to open another so close to home,” said Bayless, an Illinois resident. “The Caesars brand is synonymous with great hospitality, something that inspired the creation of Tortazo, so it feels like the perfect fit.”

The Harrah’s Joliet Tortazo is scheduled to open this spring, with the  Las Vegas location slated to open in late summer.
