R&G Lounge, the San Francisco institution that has been sending out Cantonese standards for more than 40 years, is bringing the wok hei — the savory, roasty “breath of the wok” — to the Las Vegas Strip.

R&G is set to open this year in the Forum Shops at Caesars, in a space adjacent to Zaytinya by José Andrés, according to a Monday announcement that did not include a menu.

In San Francisco, the restaurant is known for its salt and pepper crab made from animals pulled live from the tank, chopped and fried in the shell; its steamed live clams with beaten egg; a snarl of garlicky egg noodles tossed with prawns, clams and scallops; and the banquet menu.
